Head lettuce with tender leaves, rather rounded, tender, smooth or sometimes blistered. The veins are pinnate. "Fat" summer lettuce. Small, firm apple, tight and elongated, with thick leaves, dark green, crunchy and fleshy. Heat resistant, ideal for summer crops and for southern regions.

Winter lettuce. Medium apple, round and firm, with rather embossed blond green foliage. It is a selection of Queen of May resistant to cold.

Laitue d'été et d'automne. Très grosse pomme verte blonde allongée pouvant dépasser 1 kg, tendre et savoureuse. Vigoureux, très rustique, résistant aux graines qui poussent. Variété du début du XXe siècle.

Spring, summer and fall lettuce. Large, firm apple with smooth, crunchy leaves tinged with brown. Tasty. The least popular slug!

An early variety for spring or autumn, even summer for the northern zone. Golden blond, shiny, wavy, blistered foliage. Well-groomed apple, light green, firm, voluminous and crunchy. Variety tolerant to diseases. Good conservation after harvest and excellent taste quality.

Biennial plant of about 80 cm. Superb mauve bloom from March to June. The flowers, in clusters, whose scent is exhaled especially at night, attract butterflies. The fruit is particularly decorative: a flat and rounded silique showing the seeds by transparency. When the two side membranes fall off, only a thin pearly disc remains, widely used in the composition of dry bouquets.

Cambrai green lamb's lettuce

Perennial plant from 30 to 80 cm. Small, oval, embossed and serrated leaves that give off a sweet, lemony scent when crumpled. Astringent taste with a light aroma. To consume in herbal teas. Light tonic and stimulating property.

Traditional variety with oval fruits weighing 1 to 1.5 kg in the shape of a rugby ball. Bright golden yellow bark, white flesh, sweet and fragrant. Harvest before full maturity and keep for several months in the cellar. We can still eat it at Christmas.

Late southern variety. Oval fruit, dark green with pale red flesh, quite thick, very sweet and juicy. Can be stored in the cellar for a good part of the fall and sometimes until February.

Leaves deeply cut into strips, dark, very decorative. Good flavor, the pungent mustard taste is less strong than the red giant.

Variety of type "echalion". Bulb curved, pink, elongated and pointed, shaped like a large shallot, 2 to 5 cm in diameter and 10 to 18 cm long. Pink chair, juicy and fragrant. Can be eaten both raw and cooked. Very nice peasant selection, good presentation for the fresh market. Good yield and good conservation (until March).
